UI is an abbreviation of User Interface, which is a school of development that centers on building highly usable and easy to understand website elements. These many times draw on previously established models that users are already familiar with in order to help more quickly acclimate the user to the system they are using. Poor user interface (UI) design can lead to user frustration and a lack of willingness of your customers to stay with your product. We all know computers can be a hassle at times, so who wouldn't choose one product over another if it was easier to use?
UX or User Experience is similar to UI in that the focus is also on what the user of your website interacts with, but here, the experience (the X in UX) is what is gauged as a factor of interface quality. The most popular example of this today would be Mac's iPhone with its intuitive touch screen interface and very elegant transitions between separate informational screens.
